Ingredients
1tbspavocado oil
2tbspbutter
¾cupyellow onionfinely chopped
½cupred bell pepperfinely chopped
1½tspminced garlic
2largeeggs
¼tspsalt
¼tspblack pepper
4cupsfresh riced cauliflower
2tbspsoy sauce
1tspsesame oil
¼cupgreen onionschopped

Instructions
Heat avocado oil and 1 tablespoon butter in a large skillet over medium heat until butter is melted. Add onions, bell pepper, and garlic & cook, stirring frequently, until onions are beginning to brown—approximately 7 or 8 minutes.
In a small bowl, whisk together eggs, salt & pepper.
Push vegetables to one side of the skillet so that most of the pan is exposed. Pour egg into the exposed area of the skillet & cook, stirring occasionally, until just barely scrambled.
Push egg to side with vegetables; add remaining tablespoon of butter & let it melt, then add cauliflower rice to pan and increase heat to medium-high. Stir fry for 5-6 minutes, until the cauliflower is just tender.
Remove from heat; stir in soy sauce, sesame oil, and green onions.
