Ingredients
1poundground Italian pork sausage
1poundground beef
1tbsp.Italian seasoning
1egg
1tablespoondried parsley
¼cuppork rind crumbs
¼cupgrated Parmesan cheese
½tsp.Salt
¼tsp.Black pepper
12ouncesmozzarella cheesecut into cubes

Instructions
Preheat oven to 400 degrees; line a large baking sheet with parchment paper or silicone baking mat.
In large bowl, mix together pork, beef, italian seasoning, egg, parsley, pork rind crumbs, parmesan cheese, salt, and pepper until well blended.
Form meatballs by taking a large tablespoon of meat mixture and wrapping it around a mozzarella cube until it is fully enclosed, leaving no gaps. Place meatballs on baking sheet.
Bake for 15-20 minutes, until fully cooked through. A small amount of cheese may leak out–this is normal.
While meatballs are baking, heat sauce in medium saucepan over medium heat.
Serve meatballs with marina.

Careful with the sauce! Keep carbs low by limiting the amount of sauce you use.
