Ingredients
2whole limes
2tbsp.olive oil
¼cuponion diced
2tsp.minced garlic
4cupsriced cauliflowerpreferably fresh, not frozen; available in produce section
½can unsweetened whole fat coconut milk
1tsp.seasoned salt
¼tsp.black pepper
¼cupfresh cilantro choppedoptional

Instructions
Squeeze limes to release ¼ cup of fresh lime juice; set aside. Heat olive oil in a medium to large skillet over medium high-high heat. Add onions to pan; saute for 2-3 minutes until soft.
Add cauliflower rice and garlic; cook 1-2 minutes more.
Add coconut milk, along with salt and pepper. Cook for 5-7 minutes more, or until cauliflower is soft and coconut milk is absorbed.
Remove from heat; stir in lime juice and cilantro.
