A simple low carb snack option is cream cheese stuffed peppers.

Stuffed Baby Peppers

I made these this morning for the children’s lunch boxes. I like them better than the ones in the delicatessen as the store bought ones usually uses cooked peppers and therefore are soft and don’t travel well.

These are pretty sturdy as I use the small sweet peppers, and they actually made it to school intact! You can vary the cream cheese in the stuffed baby peppers by adding lemon zest, chopped basil, mint, parsley or any other herb you like.

Stuffed baby peppers are great for snack trays, nibbles, low carb treat, and cute enough to take to a shared meal, party etc.

Ingredients
  

  • 2 baby peppers
  • 2 tbsp cream cheese full fat
  • herbs optional

Instructions

  • Wash each baby pepper and slice the top off and scoop out any little seeds that may remain.
  • With a blunt knife (like a butter knife) slowly stuff each pepper with cream cheese until they are completely full.
  • Store in the fridge for up to 3 days.

  2. I love these little mini-peppers; what a great idea to stuff them with something tasty!

  3. I make peppers similar to this. I slice in half (long way) and add seasoning salt to softened cream cheese before stuffing. I put the cream cheese mix in a sandwich bag and cut the end for easy filing. I bake them until golden brown. ❤️ I have to watch myself on how many I eat! Thank you for all the hard work you have done on your website/cookbooks! You help more than you realize!!

  4. Well a typical Mediterranean snack, we do it with peppers and with large quality olives

    What we place inside the olives and small peppers, cheese, nuts (walnuts, almonds), and oily fish (Anchovies, bonito, tuna, etc)

    the video it is in Spanish, but lower the sound, add some olive oil, pepper, double cream, and salt only if needed because the olives and the anchovies are already salted.

  5. Smoked Paprika, Cumin, Tumeric, Garlic Powder. I love to snack on bell pepper cut into strips. The unique differences in flavor of the different colors is so good. Thanks for the idea of cream cheese…. and adding spices. I mixed a dash of my favorites together and I have to restrain myself. This has taken one of my favorite snacks over the top. OMGoodness this is good! 🙂

      These raw stuffed baby peppers are meant to be eaten fresh. It’s generally the cooked and stuffed baby peppers that are stored in oil.
