I enjoy a really good fried rice! And this cauliflower fried rice recipe is a dead ringer for a good take-out fried rice without the guilt. Be sure to use fresh riced cauliflower instead of frozen to ensure your rice won’t be soggy.
This fried rice comes together in less than 20 minutes and tastes amazing when you reheat it if you have any leftover.
INGREDIENTS:
This cauliflower fried rice only uses the freshest and boldest ingredients. You don’t have to give up flavor when you are eating fewer carbs.
- 1 tablespoons avocado oil
- 2 tablespoons butter
- ¾ cup yellow onion, finely chopped
- ½ cup red bell pepper, finely chopped
- 1½ teaspoon minced garlic
- 2 large eggs
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 cups fresh riced cauliflower
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- ¼ cup green onions, chopped
STEP 1: Heat avocado oil and 1 tablespoon butter in a large skillet over medium heat until butter is melted. Add onions, bell pepper, and garlic & cook, stirring frequently, until onions are beginning to brown—approximately 7 or 8 minutes.

STEP 2: In a small bowl, whisk together eggs, salt & pepper.
STEP 3: Push vegetables to one side of the skillet so that most of the pan is exposed. Pour egg into the exposed area of the skillet & cook, stirring occasionally, until just barely scrambled.
STEP 4: Push egg to side with vegetables; add remaining tablespoon of butter & let it melt, then add cauliflower rice to pan and increase heat to medium-high. Stir fry for 5-6 minutes, until the cauliflower is just tender.
STEP 5: Remove from heat; stir in soy sauce, sesame oil, and green onions. Serve the cauliflower fried rice when it is hot.
Cauliflower Fried Rice Tips
- Remove as much moisture from the riced cauliflower as you can. If it has too much moisture, it won’t fry up as well.
- Add some sriracha to make it spicier.
- Add some shredded chicken and make it a complete dinner in one skillet.
- Use fresh garlic and onions instead of frozen or jarred. The fresh vegetables are much more aromatic.
- Serve cauliflower fried rice with garlic butter shrimp and zoodles for a filling meal.
