Many bacon-wrapped asparagus recipes are difficult because you need to get the balance right between crisping the bacon and not overcooking the asparagus.

This baked asparagus recipe is easy because you will part-cook the asparagus first.

Step 1 – Part-cook the asparagus

Snap the end off each asparagus stem. This will prevent the woody part of the asparagus from being eaten.

After preparing the asparagus, partly cook in boiling water for a few minutes until soft, but a little crunch remains in the center.

Step 2 – Wrap the asparagus with bacon

Place two asparagus spears on each bacon slice. Season with salt and pepper. Roll up and place on a prepared baking tray that has been oiled.

Drizzle with extra virgin olive oil (optional).

The bacon-wrapped asparagus spears can be baked in the oven, fried in a skillet, or grilled on the BBQ in a baking dish covered with aluminum foil.

Bake at 180C/350F for 15 minutes, or until golden and the bacon is cooked and crispy. Turn once during cooking to ensure the bacon is crispy on all sides.

Pour some oil into a large skillet or frying pan. On medium-high heat, cook the asparagus wrapped in bacon for a few minutes on each side until the bacon is crispy and golden brown.

Preheat the BBQ grill to medium-high heat. Cook the asparagus wrapped in bacon for a few minutes on each side until the bacon is smokey, crispy and golden brown.

  • 12 asparagus spears
  • 6 slices bacon
  • extra virgin olive oil
  • +/- salt and pepper

Instructions

  • Remove the bottom inch from the asparagus spears then place them into a large saucepan. Add enough boiling water to just cover the asparagus and bring to a boil for 2 minutes. You want the asparagus to remain slightly crunchy, but not raw, in the middle. Remove from the heat and drain.
  • Place each bacon slice on a chopping board and place 2 cooked asparagus spears on top.
  • Season with salt and pepper then roll the asparagus with the bacon slices and place each one in an oiled baking dish. 
  • Bake at 180C/350F for 15 minutes, or until golden and the bacon is cooked and crispy.

  2. Hi Libby. I saw this pin and had to come and comment. First, I love proscuitto wrapped asparagus and so do my kids. But what I really wanted to say is the the photo of the asparagus on the black plate is lovely. The back lighting kisses the asparagus in a very appealing way. It’s just beautiful.

  3. I wrapped single asparagus in Australian pork prosciutto and fried them and they were amazing. Forgot to do the parmesan and cream thingy ,so next time they will be even more delish

  4. I made this tonight as a side dish however, the Italian Deli where I got my prosciutto sliced smaller pieces so, I opted to get a bit of capicolla as well. I used both in this dish and it turned out fantabalus!!! 10 out of 10 will cook again. =)

  5. Lovely side dish that looks really festive, I plan on bringing this to a family Chrimas celebration. Served this time with the grain free Prk Schnitzel and mushrooms fried in ghee and heavy cream. So yummy.
