Simple Low-Carb Greek Salad

This absolutely delicious, low-carb Greek salad comes together fast, but don’t let the simplicity fool you—its intense combination of flavors packs a serious punch!

INGREDIENTS:

  • 1 large or 2 small cucumbers 
  • 2 ripe Roma tomato
  • ¼ small red onion
  • 6 large black or kalamata olives
  • 4 tbsp. olive oil
  • 3 tbsp. red wine vinegar
  • 1 tsp. dried oregano
  • ¼ tsp salt
  • ¼ tsp. black pepper
  • 4 oz. feta cheese crumbles

STEP 1: Dice cucumbers, tomatoes, and red onion and place into a medium bowl.

STEP 2: Whisk together the olive oil, vinegar, oregano, salt, and pepper to make the dressing.

STEP 3: Pour the prepared dressing over the salad & mix well.

STEP 4: Sprinkle feta cheese crumbles on top of salad and serve.
