Is chicken keto?
Chicken is a versatile and filling source of complete protein. It is low in carbs and can be high fat or low fat depending on the cut of meat you choose.
The nutritional values of chicken will depend on which part of the chicken you are cooking. Boneless skinless chicken breast, for example, will be lower fat than chicken thighs with the skin. Dark parts of chicken meat will have higher iron and the chicken breast has the least fat.

Instructions
Chicken burrito bowls in the Instant Pot are simple and only take a few minutes. You will only need to cook the chicken and cauliflower rice in the Instant Pot, the rest of the ingredients in your bowl are fresh vegetables that you can chop and prepare while the chicken and riced cauliflower are cooking.

1: Cook chicken
To cook the chicken you will want to chop it into bite-sized pieces. Turn the Instant Pot to sauté mode, when the Instant Pot is hot add the chicken and keto taco seasoning.
Next, sauté the chicken for a few minutes until it is browned but not cooked through. Turn the Instant Pot off, then add the water and deglaze the bottom. Deglazing your Instant Pot will ensure that you don’t get a burn notice when cooking.
2: Cauliflower rice
If you don’t know how to prepare cauliflower rice before, I show you how to make it with no mess in this cauliflower rice recipe post. For this chicken burrito bowl recipe, you will need about 2 cups of uncooked cauliflower rice.
You can also use frozen cauliflower rice, but it will need to be defrosted first, or a longer cooking time used.
I used plain cauliflower rice, but you can spice it up however you like.
3: Layer and cook together
To cook the cauliflower rice at the same time as the spicy juicy chicken you will want to place your trivet oven the chicken in the Instant Pot, then place an oven-safe bowl containing your cauliflower rice on the trivet. You can use any stainless steel, ceramic, or glass bowl that fits a lot as the bowl is oven-safe.
Your chicken and cauliflower rice will need to cook for one minute on high pressure. Use either the “manual”, “pressure cook”, or “meat/stew” setting. Let the pressure release naturally for at least 5 minutes.
Serving
How you assemble and serve your low-carb burrito bowls is up to you. I like to serve chicken and cauliflower rice over a bed of fresh leafy greens like spinach. Then I top it with sliced avocado, keto guacamole, diced bell peppers, diced onions, sliced jalapenos, chopped fresh tomatoes, and chopped fresh cilantro.
You can add any low-carb burrito toppings that you like. Sour cream, shredded cheese, or homemade salsa are all wonderful toppings.
Storage
The chicken and cauliflower rice can be kept in the refrigerator for 3-5 days, which makes these burrito bowls a perfect recipe for meal-prepped lunches.
Because it is so fast to make and has so many fresh vegetables, you won’t want to freeze it, however, if you want to make the cooked chicken and cauliflower rice, that portion of the burrito bowl can be frozen in an airtight container for up to 2 months.
Slow cooker method
If you don’t have an Instant Pot, no problem. There are many ways you can cook low-carb chicken burrito bowls.
To make it in the slow cooker, you will want to add the diced chicken, seasonings, and cauliflower rice to your slow cooker. Cover your slow cooker with the lid and cook on high for 2 hours or low for 3-4 hours.
When making your burrito bowls in the slow cooker you can either mix the rice in with the chicken and seasonings, or you can push the seasoned chicken to one side and cook the cauliflower on the other side. Either way, it tastes great.
Stove top method
Cooking your burrito bowls on the stove is simple. First, heat olive oil or avocado oil in a skillet over medium-high heat. Now add the raw diced chicken and Mexican seasonings. It will take about 7-10 minutes to cook the chicken through. You want the chicken to have an internal temperature of 75 degrees C/165 degrees F.
When the chicken is completely cooked, remove it from the frying pan and set it aside. You can cook your cauliflower rice in the same skillet that you cooked your chicken, this will flavor the cauliflower rice.
If you prefer plain cauliflower rice, add a bit of oil to a new pan and sauté the cauliflower rice on medium heat until it softens. Then assemble your burrito bowls to make a delicious meal that everyone will love.
Variations
Chicken burrito bowls really are so easy. This recipe is really just a base recipe, there are so many ways you can create your desired toppings and customize the bowls to each family member.
- Serve on top of Mexican coleslaw for a crunchy vegetable bowl.
- Serve on a bed or chopped fresh spinach or romaine lettuce if your children don’t like cauliflower rice.
- Serve inside my cheesy keto tortillas or as a wrap or burrito.
- Serve with lime wedges, chopped cilantro (coriander), garlic powder, roasted peppers, red onion, chili powder, sliced green onions, and a hot sauce.
- If dairy free, omit any shredded cheese and sour cream. Squeeze lime juice over the top and serve with a lime wedge.

Ingredients
Burrito Chicken & Cauliflower Rice
- 450 g chicken breasts cut into bite sized pieces
- 1 tsp extra virgin olive oil
- 1 tsp garlic minced
- 1 tbsp chilli powder
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp ground cumin
- ½ tsp salt and pepper
- 80 ml water
- 2 cups cauliflower rice/pearls
Toppings/Bowl
- spinach
- tomatoes
- yellow capsicum/bell pepper
- red onion finely diced
- mashed avocado
- jalepeno slices
- cilantro
Instructions
- Turn the Instant Pot to sauté mode. Add the olive oil. When the oil is hot add the chicken and seasoning to the Instant Pot. Brown the chicken for 2-3 minutes, this will keep the chicken from sticking together while cooking.
- Turn the Instant pot off. Add the water to the Instant Pot and deglaze the bottom of the insert. This will ensure you do not get a burn notice while cooking. Next, place the trivet over the chicken. Add the cauliflower rice to an oven-safe bowl that fits inside your Instant Pot. Place the bowl of cauliflower rice on top of the trivet.
- Close the lid and turn the pressure valve to sealing. Cook for 1 minute using the "manual" or "pressure cook" button. Let the pressure release naturally for at least 5 minutes before doing a quick release and removing the lid.
- Assemble your burrito bowls by placing chicken and cauliflower rice over a bed of spinach or leafy greens. Add your desired toppings and enjoy!
