Slow-Cooker Buffalo Chicken

If you are a buffalo lover you are going to obsess over this recipe. It requires minimal ingredients, minimal effort, but has a lot of flavor and crunch.

These buffalo chicken lettuce wraps are low-carb, keto-friendly, and gluten-free.

Freshly chopped vegetables are used for toppings to give your lettuce wraps lots of crunch.

How to cook buffalo chicken in the slow-cooker

SLOW-COOKER COOKING METHOD

Cooking buffalo chicken in a slow cooker is very easy. Just dump the chicken, hot sauce, seasoning, and cream cheese into the slow cooker. Then cover and cook on LOW for 4-6 hours. 

Chicken is best cooked on LOW in a slow-cooker so that it doesn’t dry out. When you cook it on HIGH the chicken will cook too quickly and can become tough. 

OVEN COOKING METHOD

You can also bake the chicken in the oven if you do not have a slow cooker. Simply place the ingredients in a covered casserole dish, cover, and cook at 220 degrees C/425 degrees F for 35-45 minutes or until done.

How to shred chicken using an electric mixer

Once the chicken is completely cooked you will want to shred the chicken and mix it together with all the sauce. I have found the easiest way to shred chicken is with an electric hand mixer.

The chicken will be very soft and can be shredded directly in your slow cooker. This will also mix the chicken with the sauce as it is shredded. 

Another alternative to easily shred the chicken is to use a blender or meat claws. The chicken can be placed in a blender or food processor, then pulse the blender several times until the chicken is shredded.

Assembling Healthy Grain-Free Buffalo Chicken Lettuce Wraps

After the lettuce is shredded, let it cool for a few minutes before assembling your lettuce wraps. Then fill your leave of lettuce with a few spoonfuls of chicken.

Any lettuce can be used for the lettuce wraps, but I usually use romaine, bib, or butter lettuce for the wrap. To add extra crunch and vegetables to the meal I will chop up some celery, cucumber, and onions as a topping for the lettuce wraps.

For a little extra flavor drizzle some more hot sauce over the top and sprinkle with blue cheese, goat cheese, or gorgonzola cheese. 

Serving Buffalo Chicken Lettuce Wraps

You are now ready to eat your lettuce wraps. My family love to assemble their own lettuce wraps, so I will often set the toppings out and allow them to have fun making their own lettuce wraps.

Any leftover chicken can be stored in the refrigerator or frozen for future use. The buffalo chicken keeps well, so it is also a great choice for meal prepping.

You will want to add all the ingredients to assemble the lettuce wraps into a bento box so that they can be assembled when you are ready to eat. Enjoy!

Ingredients
 
 

Buffalo Chicken

  • 500 g boneless chicken breast or thighs
  • 125 ml red hot sauce sugar-free
  • 1 tsp garlic powder
  • 1 tsp fresh dill 1/2 tsp dried dill
  • 110 g cream cheese
  • salt and pepper

Toppings

  • large leaf lettuce romaine, bib, butter, red, green
  • chopped celery
  • chopped cucumber
  • red onion finely diced
  • chopped green onions optional
  • red hot sauce
  • crumbled cheese goat, blue, gorgonzola, etc

Instructions

  • Add all the ingredients for the buffalo chicken into your slow cooker. Cover and cook on LOW heat for 4-6 hours.
  • When the chicken is done, shred the chicken and mix it together with the sauce in the slow cooker. An electric hand mixer, food processor, or blender can be used to easily shred the chicken.
  • Let the chicken cool for a few minutes and then assemble the lettuce wraps. Top the lettuce wraps with chopped fresh vegetables, hot sauce, and crumbled cheese. Enjoy!

    Oh gosh! These look divine and would be a totally different way to cook chicken as opposed to our usual roast chicken. I eat a lot of chicken following Keto and it’s nice to have a different take on it! Sim x

    1. I haven’t tried Kaitaia fire yet, but that would be lovely. This recipe was developed using Red Hot Sauce (you can buy it in US grocery stores in Auckland and around the country).

      You could cook it on a very low setting in the oven for the same number of hours. The chicken needs to be slow-cooked to release the moisture and stay beautifully tender.
