This ultra flavorful Honey Dijon Chicken recipe was originally taken from our sister website, Living Well Spending Less, and has long been a family favorite (even for people who eat carbs!) Now that we’ve adapted it to be keto-friendly, low carb dinner by swapping in low-carb honey, it’s a great low carb dinner option that even your pickiest eaters will love.
Save on time during the week by preparing the chicken in the honey dijon marinade ahead of time, then freezing or refrigerating until needed. You can even double or triple the recipe to keep on hand!
INGREDIENTS:
- 1/4 large sweet onion
- 2 cloves garlic
- 1/4 cup olive oil
- 1/4 cup Dijon mustard
- 1/4 cup low-carb honey substitute (we recommend Wholesome Yum)
- 1 teaspoons seasoned salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley chopped (optional)
- 2 pounds boneless, skinless chicken breasts (or thighs)
STEP 1: Mince onion and garlic or crush garlic in garlic press.

STEP 2: In medium bowl, whisk together olive oil, Dijon mustard, honey, salt, pepper, onions, garlic, and parsley, until well blended.
STEP 3: Then pour into a 1-gallon freezer bag. (If freezing, be sure to label bag ahead of time.)
STEP 4: Place chicken into bag with honey mustard mix; let marinate for at least 30 minutes or overnight, or press out air from bag and freeze.
STEP 5: Thaw if frozen. Grill 6-8 minutes per side, basting with additional marinade, if desired. ALTERNATE COOKING DIRECTIONS: Place in casserole dish and bake at 400 degrees for 30-40 minutes.
