Easy Buffalo Chicken Low-Carb Casserole
As a busy working mom, it’s super essential to find quick & easy keto-friendly recipes that not only fit my own low-carb lifestyle, but that are so delicious my kids and husband will happily eat them too. Because I don’t know about you, but I definitely don’t have time to cook different things for every member of my family!
This Buffalo Chicken Low-Carb Casserole is one of our all-time favorites and one of my kids’ most-requested meals. It comes together super fast, especially if you’ve already got shredded chicken on hand. (In a pinch, we’ve even chopped up chicken tenders from the Publix Deli, though the breading does increase the carb count!)

INGREDIENTS:
- 8 oz. cream cheese, room temperature
- 2 eggs
- ⅔ cup blue cheese dressing
- ½ cup buffalo wing sauce
- ⅓ cup celery, thinly sliced
- ¼ cup green onions, thinly sliced
- ½ tsp. Salt
- 2 cups shredded cheddar cheese
- 4 cups cooked chicken, shredded or cut into bite sized pieces
- 4 cups riced cauliflower (find in the produce section)

STEP 1: Preheat oven to 375 degrees; grease 9×13” baking dish. In large mixing bowl, whisk together cream cheese, cheddar cheese, eggs, blue cheese dressing, buffalo sauce, celery, green onions, salt, and ½ cup of cheddar cheese.

STEP 3: Add chicken and cauliflower to cream cheese mixture and blend well.

STEP 4: Pour into baking dish.

STEP 5: Sprinkle with remaining cheese.

STEP 5: Bake 40-45 minutes until the cheese is golden brown and bubbly

Absolutely delicious! It reminds me and my husband of the Buffalo chicken dip we would feel guilty about eating at parties :), but 100% ok for keto!
Buffalo Chicken Casserole was delicious and easy to make and freeze for another meal.
