As a busy working mom, it’s super essential to find quick & easy keto-friendly recipes that not only fit my own low-carb lifestyle, but that are so delicious my kids and husband will happily eat them too. Because I don’t know about you, but I definitely don’t have time to cook different things for every member of my family!

This Buffalo Chicken Low-Carb Casserole is one of our all-time favorites and one of my kids’ most-requested meals. It comes together super fast, especially if you’ve already got shredded chicken on hand. (In a pinch, we’ve even chopped up chicken tenders from the Publix Deli, though the breading does increase the carb count!)

INGREDIENTS:

  • 8 oz. cream cheese, room temperature
  • 2 eggs
  • ⅔ cup blue cheese dressing
  • ½ cup buffalo wing sauce
  • ⅓ cup celery, thinly sliced
  • ¼ cup green onions, thinly sliced
  • ½ tsp. Salt
  • 2 cups shredded cheddar cheese
  • 4 cups cooked chicken, shredded or cut into bite sized pieces
  • 4 cups riced cauliflower (find in the produce section)

STEP 1: Preheat oven to 375 degrees; grease 9×13” baking dish. In large mixing bowl, whisk together cream cheese, cheddar cheese, eggs, blue cheese dressing, buffalo sauce, celery, green onions, salt, and ½ cup of cheddar cheese.

STEP 3: Add chicken and cauliflower to cream cheese mixture and blend well.

    Absolutely delicious! It reminds me and my husband of the Buffalo chicken dip we would feel guilty about eating at parties :), but 100% ok for keto!
