Now that we’ve adapted it to be keto friendly by swapping out high-sugar barbecue sauce for a sugar-free version, it’s a great low-carb dinner option that even your pickiest eaters will love.

Save on time during the week by preparing the pork in the barbecue marinade ahead of time, then freezing or refrigerating until needed. You can even double or triple the recipe to keep on hand!

  • 2-lb. pork shoulder/butt picnic pork roast
  • salt and pepper
  • 1 c. sugar-free barbecue sauce 
  • 1 6 oz. can tomato paste
  • 1 tsp. ground cumin
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • ½ tbsp. seasoned salt
  • ½ c. apple cider vinegar
  • 1 tbsp. liquid smoke (optional)
  • ½ c. sweet onion, diced

STEP 1: Rub meat with salt and pepper; set aside.

STEP 2: In medium bowl, whisk together barbecue sauce, tomato paste, cumin, onion powder, garlic powder, seasoned salt, vinegar and liquid smoke until smooth. Add chopped onion.

STEP 3: Place meat into slow cooker, then pour in sauce and cook on low heat for 8-10 hours, until meat falls apart.
