These high-protein, low-carb hamburger rolls really are a magical, low-carb bread option. They’re a variation of our Magic Protein Bread Recipe, but instead of shaping into a bread loaf, you use a silicone hamburger bun mold to form individual rolls.

I love making a batch of these rolls to freeze so that I’ve always got them on hand when the urge for a keto cheeseburger, keto-friendly pulled pork sandwich, or low-carb sloppy joes strikes!

INGREDIENTS:

  • 12 large egg whites (or 1 ¾ c. liquid egg whites, brought to room temperature)
  • ½ teaspoon cream of tartar
  • ¼ c. allulose
  • 2 tablespoons nutritional yeast
  • ¾ c. egg white protein powder
  • Sesame seeds or Everything But the Bagel seasoning (optional)
  • Nonstick cooking spray

STEP 1: Preheat oven to 325 degrees. Add egg whites & cream of tartar to a large bowl then whip until very stiff peaks form.

STEP 3: In a separate bowl, mix together remaining dry ingredients, then slowly add dry ingredients to egg whites until just combined.  The mixture will be fluffy & resemble uncooked meringue.

STEP 3: Spray silicone hamburger bun mold with nonstick spray, then fill each mold with egg white fluff, piling it high and shaping each one into a hamburger bun shape.  Please note that unlike regular bread, this batter will not rise, so how you shape it is how it will bake. If desired, sprinkle rolls with sesame seeds or Everything But the Bagel seasoning(optional).

STEP 4: Bake for 15-18 minutes, until rolls are golden brown.  DO NOT OPEN THE OVEN AT ANY TIME. Turn off the oven and leave rolls in the oven for approximately 20 minutes.

STEP 6: Remove rolls from oven and let cool completely. Store in freezer to use as needed.
