I know it’s tempting to try and save time and just sauté the cauliflower rice at the same time as the garlic and onion but don’t. First, take a few minutes to sauté the butter, garlic and onion. This will extract more flavor from them and amp up that flavor.

Carb-free ways to boost the cheesy cauliflower rice with more flavor include sprinkling everything bagel seasoning on top, adding hot sauce and sprinkling red pepper flakes on the rice.

Ingredients

  • 3 tbsp. butter
  • ½ c. yellow onion, diced
  • 1 tsp. minced garlic
  • 4 c. fresh riced cauliflower 
  • ⅓ c. heavy cream
  • 1 c. freshly shredded sharp cheddar cheese
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ¼ tsp. black pepper

STEP 1: Melt butter in large saucepan over medium heat. Add onions and cook, stirring occasionally, until onions are soft and translucent, about 3 minutes. Add garlic and cook an additional minute.

STEP 2: Add the cauliflower rice to saucepan and cook for 5-6 minutes more.

STEP 3: Stir in heavy cream, grated cheddar and seasonings. Cook until the cheese is fully melted, approximately 3-4 minutes more.
