5-minute vegetable sides
There are just some evenings when time is of the essence, even for those on the ketogenic diet. While I’m a big believer in meal prep, there are some nights when I need to throw together something healthy FAST.
Here are some of my favorite keto side dishes that come together in 5 minutes or less.
Green beans (with caution)
Are green beans keto? Generally, most people on the keto diet avoid beans and legumes because they are higher in carbs, but it depends on how many carbs per day you want to set yourself. So measure and limit how many green beans you have.
Grab a can of green beans (or frozen green beans) and give them a quick saute in some butter for an easy recipe that’s ready in no time.
Celery with peanut butter
This one is so simple but so good! Just slice up some celery and enjoy it with your favorite low-carb peanut butter.
Radishes
Radishes are one of the most perfect keto vegetables. They’re low in carbs, and high in fiber, and they have a delicious peppery flavor that I can’t get enough of. Just slice them up, drizzle on some olive oil and herbs and enjoy!
Cucumber salad
Slice up some cucumbers and toss them with sesame oil, salt, and pepper. It’s an Asian twist on one of the best keto vegetables – my kids love snacking on this side dish!
Zucchini noodles
Zucchini noodles, or “zoodles” are a keto dieter’s best friend. They’re low in carbs, and high in fiber, and they make a great alternative to traditional pasta. Just saute them up with some olive oil and your favorite keto-friendly sauce for a delicious and easy meal.
Bagged baby spinach
You can eat baby spinach raw and cold, or you can throw a handful in a frying pan with some butter, garlic, and lemon juice and saute for 2 minutes. it’s one of the easiest vegetable recipes there is after a busy day.
Bagged salad
Don’t knock bagged salad! This grocery store staple is an easy way to get your veggies in, and it’s usually pretty low in carbs if you forgo the croutons or other carby bits.
Just be sure to check the label, as some brands can add sugar or other ingredients that you’ll want to avoid. You can always toss the dressing and add your own instead!
Air fryer keto veggies
The easiest way to cook vegetables in the air fryer is to air fry sliced bell pepper, sliced zucchini chips, and best of all, an air fryer is one of the easiest ways to reheat leftovers.
Vegetables you should not cook in an air fryer are those that need water to boil or vegetables such as kale chips that are too light and will fly around the air fryer and burn with the high heat.
