For this keto chicken recipe, you will use minimal ingredients and will only need to follow a handful of steps. At the end, I’ll share my best tips for making your slow cooker chicken look as delicious as it tastes.

How to stuff chicken breasts

Mix together cream cheese and seasoning.

Step 1: Prepare the filling.
To get started you will first want to prepare the filling for your chicken. Mix together your softened cream cheese with the shredded mozzarella cheese and seasoning. Then set it aside.

Rinse and wash your spinach and slice half a bell pepper (optional) into strips.

Cut chicken to open down the middle.

Step 2: Slice your chicken.
Next, use a sharp knife to cut your chicken breast down the middle, but not all the way through to create a pocket for your filling. You will want to tilt the knife at an angle while you cut. An angled cut will keep the cheese filling from spilling out while the chicken cooks.

Stuff the chicken with cream cheese.

Step 3: Stuff the chicken breasts.
Then stuff your chicken with the cream cheese mix, spinach, and bell pepper slices. Now that your chicken is stuffed you will want to pat the chicken dry with a paper towel and season your chicken with salt and pepper.

Recipe variation: You can mix some herbed butter with your cream cheese if you want a garlic flavor, blue cheese, lemon and herbs, or rosemary and lemon.

Fill the chicken with spinach and sliced peppers.

How to cook chicken in the slow-cooker

Now it’s time to cook your prepared chicken breasts. Spray the insert of your slow cooker with olive oil and arrange the chicken in a single layer in the slow cooker.

Cover the slow cooker with the lid.

No additional liquid is needed to cook the chicken.

You will want to cook your chicken on LOW heat for 2-3 hours to ensure the chicken doesn’t cook too quickly and dry out. Check the chicken at the 2-hour mark, if the internal temperature is not at 75C/165F let the chicken cook for another 20-30 minutes then check the chicken again.

When your chicken is done, remove the chicken from your slow cooker and let it rest for 5-10 minutes before serving. This is the perfect time to make a quick side dish for your meal.

Sautéed asparagus is an excellent side to compliment your stuffed chicken.

I recommend sprinkling the paprika and parsley on the chicken after it has cooked to ensure it doesn’t wash off while the chicken is gently coking away in your slow cooker.

Ingredients
  

  • 4 chicken breasts
  • 1 cup spinach
  • 1/2 bell pepper cut into slices

Cream Cheese Filling

  • 4 oz cream cheese softened
  • 1/2 cup pre-shredded/grated mozzarella
  • 1 tsp garlic minced minced
  • 1 tsp onion powder
  • salt and pepper

  • paprika
  • fresh or dried parsley

Instructions

  • Mix together the cream cheese filling ingredients together in a bowl and set to the side.
  • Use a sharp knife to slice each chicken breast down the middle so that the chicken breast will open can be stuffed. Make sure you do not cut the breast all the way through. Repeat with all 4 breasts.
  • Stuff each breast with the cream cheese filling, spinach, and bell pepper slices. Season the chicken with salt and pepper then place the slow cooker in a single layer to cook. You do not need to add any additional liquid.
  • Cook the chicken on LOW for 2-3 hours of until the internal temperature is 70C/165F. Check the chicken after two hours, and then ever 20-30 minutes after that until the chicken is done. Serve and enjoy!
