How many carbs are in curried eggs?

If you eat an entire curried egg (two halves), you aren’t even consuming ONE whole net carb! This egg recipe has 0.7 grams of net carbs. See what I mean about how these are the perfect snack for keto or a low-carb lifestyle?

How to boil eggs

A major part of nailing this recipe is knowing how to boil eggs. It’s one of those simple tasks that can be done multiple ways, but these are my two favorite methods:

Traditional stove method:

Put eggs in a medium saucepan full of COLD water and bring to a boil over high. This is important to stop them from cracking as they cook.

Once boiling, lower to medium-high heat to simmer and cook for 6 minutes. Drain the boiling water then cover the cooked eggs in cold water to stop them from cooking any further. This technique will stop the yolks from discoloring.

Once cold, peel and cut eggs in half. Pop the yolks out into a large bowl, mix with mayonnaise or butter and add curry powder to taste. Spoon the yolk mixture back into the egg white cases.

Instant Pot quick & easy method:

The best way to cook a dozen or more eggs in only a couple of minutes is to use your pressure cooker.

How to flavour curried eggs

This curried eggs recipe is incredibly versatile, while also keeping the ingredient checklist very short.

Once your eggs are boiled, peeled, and cooled, all you need to do is slice them in half (lengthwise). Then scoop out the egg yolks and mix it in a small bowl with some magic mayonnaise (it takes just 1 minute to make!).

Mix it up with the spices of your choice for added flavor. For these curried eggs I like to use garam masala curry powder.

Substitutions

If curry isn’t your thing or if you want to change it up a bit, try some other variations. Chopped green onions, cracked black pepper, a bit of mustard powder, or a sprinkle of coarse salt can be used in addition to curry or instead of.

High-protein meal or snack

This is one of those great recipes every parent needs to keep in his or her wheelhouse. I will typically make at least a dozen curry eggs each week as part of my favorite brunch recipes. They disappear fast from the serving plate.

If you want to make them into an easy meal or one of those no-fuss family dinners, then simply chop them up. Then turn it into a yummy twist on the classic egg salad served over lettuce or keto bread. This is great backyard or healthy picnic food too!

  • 1 eggs – medium
  • 2 tsp mayonnaise

Instructions

  • Boil the eggs as instructed above, stovetop or pressure cooker.
