FAQs About Low-Carb Cheesecake Recipes
We’re about to jump into all the yummy keto desserts, but first, let me answer a few questions you might have about turning regular cheesecake into keto recipes.
Is Cream Cheese Keto?
Yes, cream cheese is very keto-friendly. One tablespoon of cream cheese has 0.8g net carbs, less than 1g protein, and 5 grams of fat. It’s a source of healthy fats that are essential for people who are hoping to get their body into fat-burning mode on a keto diet.
How Do I Make A Keto Cheesecake Crust?
Graham crackers, sugar, and wheat flour are all ingredients you should avoid on the keto diet. So obviously, we have to work with a different crust recipe altogether! The best way to make a keto-friendly cheesecake crust is with a low-carb flour such as either almond flour or coconut flour.
The ideas on this list use these low-carb flours in ingenious ways. Trust me, you’ll never miss the graham cracker crust!
Can You Make Cheesecake Without Sweetener?
It is possible to make a cheesecake without sugar but to make the best cheesecake possible, you will need a low-carb sweetener of some sort. Cream cheese is not naturally sweet, so when you make a cheesecake with it, you need something to make it taste like a dessert.
There are lots of sugar-free sweeteners such as monk fruit sweetener or an erythritol blend you can choose from and almost all of them won’t give you a bad aftertaste.
Check out this guide to sugar-free sweeteners to learn how to choose the best one for your keto-friendly desserts.
How Do You Store Low-Carb Cheesecake?
The best way to store keto-friendly cheesecake is in the refrigerator in an airtight container. It will stay fresh for 4-5 days.
If you want to keep it longer than that, I suggest freezing it. Cheesecake freezes really well. Store it in the freezer in a well-sealed container. It will stay fresh for up to 5 months. You can even pre-cut it into individual slices to freeze and enjoy.
When you are ready to eat your frozen cheesecake, just let it thaw in the refrigerator overnight.
What Are Some Substitutions I Can Make?
When it comes to cheesecake, there are 3 basic ingredients that are in every recipe: the crust is usually almond flour, the filling is some sort of cream cheese combination, and the entire thing is sweetened with a sugar substitute.
Instead of almond flour, you can finely grind up any type of nuts. I’ve used walnuts with fantastic results. Other people have made a coconut flour cheesecake crust too.
There really isn’t a substitute for cream cheese. Neufchatel cheese has less fat, but it will give you the same flavor and texture. Two other options you could try are mascarpone or ricotta. They will have a slightly different texture but can still work.
When you are trying to find a sugar substitute, please refer to my guide to sugar-free sweeteners. It will tell you everything you need to know.
Egg-free cheesecakes
If you’re looking for a cheesecake without eggs, you’ll love my keto cheesecake mug cakes without eggs. They only take 1-minute to cook and you can choose strawberry, Nutella, pumpkin pie spice, or blueberry vanilla.
Each one is a single-serve healthy dessert so you will have instant portion control.
